Buffalo Chickpea Salad Sandwich

This chickpea salad will definitely fool you (especially when you’ve got that turkey hangover going on).  It’s super easy to make, satisfies the craving for that spicy buffalo flavor, but best of all, it’s light.  I’ve been trying to fuel with more plant based options lately to reap the benefits of more vitamins and minerals, fiber, and antioxidants. Not to worry about getting enough protein though-legumes (chickpeas) combined with whole grains (sprouted grain bread) form a complete protein for your body to utilize.

Recipe

2 (15 ounce) cans chickpeas (garbanzo beans), drained and rinsed
½ cup nonfat Greek yogurt
½ cup bleu cheese
1-2 celery stalks, chopped
3 tablespoons hot sauce, such as Frank’s
½ teaspoon kosher salt
¼ teaspoon black pepper
